Roasted Garlic


I came across some firm and nice looking garlic heads on sale; 4 for $1, a bargain for sure.

When I prepared them I noticed most of them were getting ready to sprout, but they turned out fine regardless. The house was filled with a lovely fragrant aroma while I had them in the oven roasting.

Several cloves found their way into my garden.. I couldn't resist planting them.



3 heads of garlic
2-3 tbsp olive oil
salt and freshly ground pepper

Preheat oven to 375°F.


Remove as much of the papery skin from the heads as possible, but leave them intact. Slice off the tops of the individual cloves.


Place them into a baking dish and drizzle about 1-2 teaspoons of oil onto the cut surfaces each head,  then sprinkle them with salt and ground pepper.


Cover the dish with foil and bake for about 30 - 40 minutes, or until the garlic is soft. Allow to cool before storing them in the refrigerator.

  1. What do you eat your roasted garlic with? I always have them with mashed potatoes but I'm looking for some different options :)

  2. I've added it to bread (beer bread with garlic and cheese), salads, gravies, relishes and I've used it as a topping on pizza.

    It disappears quickly when I have it on hand.
