Cucumber Salad

(4 servings)


This is a nice light salad which will keep for several days.

1/4 cup white vinegar
1/2 cup water
2 tsp sugar
1 tsp salt
1/4 tsp freshly ground black pepper
1 tbsp fresh dill, chopped or 1 tsp dried dill
1 large english cucumber, thinly sliced

Combine the vinegar, water, sugar, salt, pepper and dill in a large non-reactive bowl. Stir the mixture until the sugar and salt have dissolved.
Add the cucumber and toss, then cover and allow the cucumbers to marinate for a few hours.
