Simple Tomato Salad

(2-3 servings)

I can still remember when my mum would bring juicy tomatoes in from the garden and prepare them very simply with a bit of salt and pepper, and a light drizzle of vinegar and oil. Sometimes she added onion and sometimes she didn’t; the salad was always delicious either way. 

She would allow the salad to marinate by leaving it out on the counter for an hour or so. By the time the salad was ready to eat, the kitchen had a wonderful fragrance of sweet juicy tomatoes.

1 lb tomatoes
1 green onion, sliced
salt and freshly ground black pepper
about 1 tablespoon white or red wine vinegar, or more to taste
about 1 1/2 tsp olive oil, or more to taste

Slice the tomatoes about 1/4 inch thick and arrange them in a single layer on a large serving plate.

Dust them evenly with salt and pepper, then sprinkle them with the green onion slices.

Drizzle the tomato slices with the vinegar and olive oil. Allow them to sit at room temperature for at least an hour before serving.

Just found your blog as I was trying to find recipes involving green onions & I love it! I tried your green onion & cheddar popovers and they're excellent. Yum! :P I stuck a photo of the result on my blog (Though I'm not armed with the amount of light you are. That's cavelike apartment living for ya.).
