Smoked Oyster Spread

(about 1/2 cup)


A fellow I met in high school introduced me to this delicious spread. He used to serve it on hot buttered toast. It's also great with crackers.

1 3.7oz tin smoked oysters
1/2 cup extra sharp cheddar cheese, grated
1 tbsp red onion, finely diced
1 or 2 pinches cayenne (optional)
1-2 tsp sour cream or plain greek yogurt (if needed)

fine onion slices for garnish

crackers for serving

Drain the oysters and place into a small bowl. Add the cheese, diced onion and cayenne, if using.


Mash everything together with a fork. Add a small amount of sour cream or yogurt if the mixture seems dry.

Serve with crackers.

i've never had canned oysters, but this looks really yummy. i am a huge mussel fan though.
