Red Cabbage Coleslaw

(about 4 servings)


Cabbage and carrots are in season in Texas at the moment. Both these vegetables found their way into this delicious coleslaw.

1 tbsp onion, grated
2 tbsp mayonnaise
2 tbsp sour cream
2 tbsp milk
1 tbsp apple cider vinegar
2 tsp honey
1/2 head red cabbage, finely shredded
1 carrot, grated
salt and freshly grated pepper, to taste

Combine the onion, mayonnaise, sour cream, milk, vinegar and honey in a large bowl.


Add the red cabbage and carrots. Toss. Add salt and pepper, to taste. Toss again and serve.
