Moroccan Quinoa Salad

(about 4 servings)

This flavourful and exotic salad is a great choice for potlucks as it travels really well. I used to make this with couscous and added olive oil. The quinoa makes a great substitute and I don't miss the oil at all in this version.

I love this combination of spices; cumin, ginger, cardamom and cinnamon with a pleasant kick from the Harissa.

2 cups chicken broth or vegetable broth
1 tsp cumin
1/2 tsp ground ginger
1/2 tsp cardamom
1/4 tsp cinnamon
1 cup quinoa
juice from 1/2 lemon, or more to taste
2 tsp honey
1/2 tsp (or more to taste) Harissa
1 large carrot, shredded
1/4 cup dried currants
1 green onion, thinly sliced
2 tbsp cilantro, chopped
salt, if needed

Heat the chicken broth in a saucepan and add the cumin, ginger, cardamom and cinnamon. Stir in the quinoa (check the package to see if it needs to be rinsed in water first). Simmer gently for about 15-20 minutes. Remove from heat when most of the liquid has been absorbed into the quinoa. Allow to cool.

Combine the lemon juice, honey and Harissa in a bowl. Stir in the cooled quinoa, shredded, carrot, currants, green onion and cilantro.

Check and adjust the seasoning, if necessary.

Loooove quinoa salad. Made this tonight and it was quite tasty. I didn't have Harissa, nor the inclination to make it, so I added a teaspoon of olive oil, a couple of generous pinches of kosher salt and a pinch of cayenne for some heat. I licked my stirring spoon. So delicious! Thanks for sharing!

Thanks everyone!

Heather, I have never made Harissa, although I imagine it would be quite good. I'm the kind of shopper who gets distracted by brightly coloured packages. I rarely remember the name of a manufacturer of a product, but I almost always remember the packaging itself. A couple of weeks ago I picked up a tube of Harissa at Whole Foods. It was only $1.25 or so, came from Tunisia and was packaged in a beautifully coloured box. The tube itself is about the size of a medium tube of toothpaste, and won't expire for another year or so, lol. I was quite delighted to find it, and a bit surprised I have been using it more frequently than I thought I would. :)

I am making this right now for the SECOND time! I love it! Super easy, great for lunches, and potlucks. Definitely a croud pleaser. I will be adding it to my regular rotation. Thank you for sharing!

Made this for my book group. We were reading Lulu in Marrakesh. Book was not very good but this Quinoa Salad was amazing. I got a can of harissa at a local armenian market and froze tablespoon of the remaining harissa in plastic lined ice cube trays. I think I'll have enough harissa for a year or so! Also got a pkt of cardamom...it is so much fresher than what you get at the grocery store. I would recommend that others look for a middle eastern/indian market in their area if possible to get the cardamom. Making this again for memorial day BBQ. So delicious. Thank you!

May I ask what aisle you look in for Harissa? We have a Whole Foods around the corner. Thanks! This looks delish :)

The WF I go to has a small aisle with with mixture of Asian and Spanish Food. That's where I found mine.

I'm not sure where you are located, but the stores in Dallas all have an information counter near their entrance. If you can't find any in the aisle, then check there. More often then not, they will offer to call one of their other stores to try to locate and hold one for you.

If that fails, you can always find it on Amazon:

Oooh, that sounds amazing with all those spices I've never heard of! I'm usually too lazy to add many spices, but I'd love to add more flavor to my food and that exotic dish looks great!
