Lace Cookies

I've had a lot going on  this month and won't be able to bake most of the things I had planned on. The following is one of the quicker and easier cookie recipes I know of.  It's from one of my favourite cookbooks. The cookbook doesn't have a lot of photos, but it has some of the best cookie recipes I have come across anywhere.

These lace cookies are thin and crispy and have a nice buttery flavour.

The King Arthur Flour Cookie Companion; The Essential Cookie Cookbook
2004 The Countryman Press, Woodstock, Vermont

3 tbsp unbleached flour
2 1/4 cups rolled oats (not the quick kind)
2 1/4 cups light brown sugar
1 tsp salt
1 cup unsalted butter (2 sticks)
1 large egg
1 tsp vanilla extract

Preheat the oven to 375°F. Line 2 baking sheets with silicone mats.

In a bowl combine the flour, oats, sugar and salt. Warm the butter until it's just melted and stir that into the dry mixture.

Beat the egg and vanilla together and stir that into the cookie mixture.


Drop the batter by the teaspoonful onto the prepared baking sheets..  these spread a lot, so leave plenty of room between them.

Bake for about 6-7 minutes, or until they are a medium brown around the edges. Remove and allow to cool completely on the liners. They will come off very easily if you bend the silicone mat slightly.


*I have never tried making these using parchment paper as the liner. The recipe does mention that they might stick (tenaciously) if you don't remove them with a metal spatula as soon as they have cooled slightly.
