Bacon Wrapped Scallops

This is an easy appetizer to make; combining the sweet tasting and juicy marinated sea scallops with the salty crisp bacon. Finger food at one of it's finest moments.

I used a one pound bag of defrosted sea scallops which turned out to be an assortment of sizes. Determined to have my appetizers portioned equally, I wrapped two and even three scallops together with the bacon. This worked quite well.



1-2  tbsp fresh squeezed lemon juice
2 tsp fresh parsley, chopped
2 tsp fresh garlic chives, chopped
a pinch of cayenne
freshly ground pepper, to taste
1 lb sea scallops
5-7 slices "lean" bacon

Combine the lemon juice, parsley, chives, cayenne and pepper in a bowl. Add the scallops and toss. Leave them in the marinade for about 30 minutes, tossing them occasionally.

Remove the scallops from the marinade and place on a paper towel to drain. I didn't pat them down or anything like that, I just wanted some of the extra liquid removed.


Cut the bacon slices in half, and wrap each piece around a scallop, securing the bacon with a wooden toothpick.

Arrange the wrapped scallops on a baking sheet, with a side of bacon facing up and position them near the top of the oven.

Broil then for about 4-6 minutes or until the bacon browns, then turn them over and broil the other sides for another 4-6 minutes. You will have to adjust the broiling times a bit depending on the size of your scallops and the thickness of your bacon. Mine wasn't cut ultra thin,  but it worked just fine and the scallops were cooked perfectly.

Remove from the oven and serve.
