Red Onion Relish

(about 1 1/2 pints)


This stuff is great on steaks, burgers, chicken, pizza...   sandwiches....   lots of things...  yum!



2 tbsp olive oil
3 large red onions, sliced (about 1 3/4 lb)
1/4 tsp dried thyme
3 tbsp brown sugar
1/4 cup balsamic vinegar
salt and freshly ground black pepper

Heat the olive oil in a large skillet or pot and add the onions. Stir to coat them with the oil.  Lower the heat and saute them for about an hour, stirring them occasionally.


Stir in the thyme, sugar and vinegar. Cook for another 15-20 minutes. Adjust the seasoning with the salt and pepper.

Cool and store in the refrigerator.
