Deviled Egg Salad

(2 servings)


Whenever I hard boil eggs, it's hit and miss. They are either underdone or overdone. I decided to look it up this time and followed these directions. They turned out just right.


3 hard boiled eggs, broken into small pieces
1 tbsp chopped fresh chives
1 tbsp mayonnaise
1 tbsp plain yogurt
1 tsp small capers
1 tsp hot mustard
1/4 tsp paprika
salt and freshly ground pepper


Combine everything in a small bowl with a fork.
