Spiced Honey Glazed Cauliflower

(4 servings)

Hands done, this is one of the best cauliflower dishes I have made in a long time. The flavors are just amazing, from the garlic butter to the spiced honey lemon glaze coating.

This makes a nice side dish for four people, or turn this into a vegetarian meal for two and serve with rice and a salad.

adapted from Fine Cooking
1/2 tsp harissa
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp coriander
1/4 tsp salt
2 tbsp freshly squeezed lemon juice
2 tbsp water
2 tbsp honey
2 tbsp butter
2 cloves garlic, minced
1 head of cauliflower, washed and broken into small florets
1/2 red onion, diced
2 tbsp fresh cilantro, chopped

Combine the harissa, cumin, turmeric, coriander, salt, lemon juice, water and honey in a small dish. Set aside.

Melt the butter in a large non-stick skillet over a medium-high flame. Stir in the garlic, then add the cauliflower. Fry until the cauliflower is evenly browned. This will take about 6-9 minutes and you might have to adjust the heat to keep things from burning.

Stir in the onion. Cook, stirring the mixture until the onion has softened.

Pour the spiced honey mixture evenly over the cauliflower mixture and continue to cook stirring constantly until the cauliflower is nicely glazed. The cauliflower will have a slight crunch to it when done. Taste and adjust the seasoning.

Stir in the cilantro and serve.
