Garlic Shrimp

Things have been a bit hectic for me this weekend and I have been pressed for time. The garlic shrimp and asparagus came together very quickly for a delicious meal.



1 tbsp olive oil
4 cloves garlic, minced
1/2 tsp sweet paprika
1/4 tsp ground hot red pepper or more to taste
1/3 cup dry sherry
salt, to taste
3/4 lb cleaned shrimp

Heat the oil in a skillet. Add the garlic and saute for a minute or two being careful not to let the garlic burn. Add the paprika and hot pepper and stir for another minute. Increase the heat and add the sherry. When the mixture comes to a boil, add the shrimp.

Stir and flip the shrimp as they cook. They will cook very quickly, so take care not to overcook them. Mine were done in about 2 minutes.

This does look like a really great weeknight meal. I'm on the hunt for recipes like that. And I love sherry paired with seafood!
